My ward had a "food storage night" and we asked people to bring food that helped rotate stored food. I LOVE how this recipe tastes and how healthy it is. I am scared to use tofu, but after tasting this recipe, I am excited to do more with it!
In a bowl mix:
1 c. wheat flour
1 c. oatmeal
1 1/2 tsp. cinnamon
1/2 tsp. baking powder
1/4 tsp. baking soda
Mix separately in blender:
10 oz. tofu
6 Tbls soy protein powder (opt)
1/4 c. olive oil
2 eggs
1/2 c. honey
1/2 bananna (opt)
1/2 c. applesauce (opt)
Add blender mix to dry ingredients and fold. Gently add 1 1/2 c. blueberries or raspberries.
Bake at 425 degrees for 15-19 min. If you add bananas and applesauce 19 min. are usually required.
